It isn’t always easy for commercial kitchens to make sure that their food is served to the perfect temperature. However, this can be helped by kitchen equipment just like bain maries.
Bain maries are designed to keep a variety of food produce warm, particularly during transportation and serving. They come in a variety of sizes and styles, and some use wet heat and water baths in order to keep food warm, whilst others will rely on dry heat.
Dry heat bain maries are known to be much quicker to warm up than those that use wet heat. This is because, rather than using the heat to warm the water and then the container, they are heating the containers themselves directly.
They consume a lot less energy than wet heat bain maries and do not need cleaning or emptying as frequently.
The great thing about dry heat bain maries is that they can keep food warm without burning, as well as warm without being exposed to water which can make the food soggy. This means it is ideal for potatoes, pasta and anything else that you want to keep fresh.
